The AMCAN FOREST SMOKE in Summary

 

We will not remind of the many advantages of natural liquid smoke, a smoke obtained from hardwood such as maple, beech, oak or hickory. However, let's notice that the smoking process with liquid smoke allows the production of smoked products free from benzopyrene and tar, and without outside smoke emissions. The process also offers a cleaner environment and saves time compared to traditional smoking process.

We distinguish 4 categories of smoke flavors :

 

1- SMOKE POWDER

The smoke powder AFS 720 is made out of smoke extract ( code 10 ) and wheat maltodextrin. Its phenol content (16-20%) gives the product a smoked / bacon /grill taste. Because the smoke powder is added to the mix within a percentage from 0.1 to 0.5% of the end product net weight, it hardly colors the mix. AFS 720 is GMO & Gluten free.

 

2- SMOKE OIL

The smoke oil AFS BBQ OIL is prepared with sunflower oil in which a smoke extract has been added. Its phenol content is about 15%. As for the powder, the smoke oil gives a smoked taste but has almost no coloration effect on the product. AFS BBQ OIL is GMO free, in compliance with E.C. Regulations.

Application: Since it is a vegetable oil, the smoke oil can be mixed to sauces and preparations which already contain vegetable oil. If used pure, the smoke oil gives a smoked taste, while lubricating and supplying the desired amount of lipids.

 

3- STANDARD LIQUID SMOKES

It gives as much color and taste as the traditional smoking process. Several references are available:

AFS 10: Its acidity is of 10% ( in terms of acetic acid ) and its pH level is between 2 and 3. The phenol content - which gives the smoked flavor- is around 15 mg/ml .

Main usage: atomization in smoke houses and without dilution.

 

AFS 66: Its pH level has been modified to reach an average of pH 4,7. This smoke is less acid than other liquid smokes, and the low pH level allows to incorporate the smoke into mixes without alteration of the nitrite salts and no change in the emulsion. Afs 66 is hydrosoluble .

Recently, we extended our range for those applications by manufacturing AFS AUTUMN RED : the most concentrated smoke extract with a rate of phenols of 40 mg/ml ! Totally hydrosoluble . Especially recommended for brines and injection process.

 

4- SPECIAL LIQUID SMOKES: MEGA, SUPER & SOL

AFS MEGA 16: Its low pH helps prolonging conservation of the product: pH level = 2, acidity = 16%, phenol level = 35 mg/ml

As for AFS 10, its main usage is the atomization in smoke houses without dilution. But here, the smoke gives more color and more flavor. Therefore, less liquid smoke is necessary, and the process is shorten... leading to an increase in productivity.

 

AFS 10 SOL, AFS SUPER 12 SOL, and other AFS XX SOL smokes.

Those "SOL" smokes are water soluble, but they can not be used for atomization, even if they are intended to be diluted with water.

Their usage are drenching and dipping. In both cases, minimum 100% of water must be added to the "SOL" smoke. Then, we observe an increase in productivity (with 10 kilos of liquid smoke, the result is a 20 kilos bath), as well as a decrease in acidity (acetic acid and phenol levels are divided by two) resulting in a diminished smoked flavor but an equal coloration of the product.

The difference between the regular AFS smokes and the AFS MEGA or AFS SUPER smokes is the concentration, particularly of color and phenol. The MEGA or SUPER soluble smokes are the most concentrated, and in case of dipping or drenching, a bath is prepared with 25% of smoke and 75% of water.

As a general rule, with a 20 kilo pail of "SOL" smoke, we obtain a 80 kilo bath of liquid smoke. Dipping or drenching time is from 10 to 30 seconds, in one or two successive operations, depending on the product to be smoked and the desired taste and color.

 

CONCLUSION

A product smoked with liquid smoke will have the same characteristics (taste and color) than a product treated according to a more traditional process (sawdust). The advantage of liquid smoke will then be time savings, handling facilities and better sanitary aspects.
